I made a light and moist chocolate cake the other day. I think it’s the best chocolate cake I’ve ever made so far. Geez, I’m salivating as I’m typing this!

Remember last time I made Chicken Vindaloo using the same Nestle Natural Set Yogurt? Well besides tenderizing meats, yogurt also helps to moisten dough to keep it from drying out and adds a little tang. That’s what I love about this yogurt chocolate cake. And it’s healthier too, as the Nestle Natural Set Yogurt only contains 57 kcal and 1.6g of fat per 100g serving. Even the topping is a healthier version of chocolate ganache – instead of using heavy cream, I substituted it with yogurt.
Here’s how you can use yogurt as a substitute in baking, according to LiveStrong.com:
- Halve the amount of butter, add 1/4 cup of yogurt for each cup of butter
- Cut the suggested oil or shortening by half and add 3/4 cup of yogurt for each cup of oil or shortening you remove
- Reduce the amount of milk and substitute 1/4 of the suggested milk with yogurt
I have never baked cakes using yogurt before, so this yogurt chocolate cake is something very new to me. And you know how I love trying new recipes, don’t you? 😀
Here’s the recipe for Yogurt Chocolate Cake, adapted from Dear Nestle.
2 cups plain flour
2/3 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1 1/4 cup castor sugar
1 tsp vanilla essence
2 eggs, room temperature
1 1/2 cup Nestle Natural Set Yogurt
250g semi-sweet cooking chocolate
100g Nestle Fat Free Natural Yogurt
Grease and line a 10″ round cake pan with a greaseproof paper. Set aside.
Sift the flour, cocoa powder and baking soda in a medium bowl and set aside. In a mixing bowl, beat butter, sugar and vanilla essence until creamy. Add the eggs one at a time and continue beating. Using a spatula, fold in the flour mixture alternately with the Nestle Natural Set Yogurt until well combined.
Bake the cake in the oven at 180°C for 45 minutes, until knife inserted in center comes out clean. Once baked, remove from the oven. While the cake cool off, make the topping.
To make the topping, melt the cooking chocolate and Nestle Fat Free Natural Yogurt in a double boiler. Stir until smooth and glossy. And there you have a healthy version of chocolate ganache!
Spread the chocolate ganache evenly over the cooled chocolate cake. You can sprinkle nuts or sliced fruits on top to decorate the cake if you like.
